Leftover rice does not have to sit forgotten in the refrigerator. With a few simple ingredients, it can become a flavorful beef fried rice that feels completely different from yesterday’s meal.
Fried rice is one of those dishes that allows plenty of creativity. You can use whatever vegetables, meat, and seasonings you already have available.
Start by cooking thin slices of beef in a hot pan with a little oil. Season the beef with black pepper, garlic, and a small amount of soy sauce. Cook until the pieces are browned and cooked through, then set them aside.
Using the same pan, sauté chopped onions and garlic. Add diced carrots, peas, corn, or other vegetables you enjoy. Stir-fry them until they become slightly tender but still have some texture.
Push the vegetables toward one side of the pan and crack in an egg. Scramble the egg until cooked, then mix it with the vegetables.
Now add the cold cooked rice. Breaking up the larger pieces with a spatula makes it easier to combine everything evenly. Add soy sauce gradually while stirring.
Return the cooked beef to the pan and mix everything together. A little sesame oil at the end can add another layer of flavor.
The beauty of fried rice is that there is no single way to prepare it. You can use chicken instead of beef, add shrimp, include more vegetables, or make a simple version with just eggs and green onions.
Serve it hot with a few chopped green onions on top.
It is a great reminder that leftovers do not necessarily mean eating the same meal twice. With a little creativity, yesterday’s ingredients can become today’s completely new dinner.
